Paleo Coconut Biscuit Recipe
Every now and then I go through a stage where I try to cut out processed sugar completely. As much as I’d love to say I quit it once and for all, it never stays that way. I’m a sucker for a sweet treat and so I find replacing my go to sweets with a healthier alternative makes the process a whole lot easier. These paleo coconut biscuits are definitely my favourite and are so, so delicious.
Now, I understand that these are a sweet treat and should only be eaten occasionally but I can honestly say they have been a great saviour in times when I have wanted to reach for the chocolate bars instead.
These are the most simple and delicious Paleo Coconut Biscuits, you can add fillings to them if you want or just leave them as they are. The challenge is always to try and actually cook the batter before you simply eat it all yourself!
Ingredients (Makes approx. 24):
- 1 cup Cashew Butter
- ¼ cup Raw Honey
- 2 teaspoons Maple Syrup
- ½ teaspoon Baking Powder
- ½ teaspoon BiCarb Soda
- 1 cup Desiccated Coconut
- 1 Egg
- Mix all the ingredients together into a bowl. Add in any mix-ins you would like (see options below) or simply leave plain.
- On a biscuit tray lined with baking paper, spoon batter into small heaps, leaving enough room to spread. These biscuits spread quite a bit so I only have 9 to a tray.
- Bake in the oven at 180°C for around 10 minutes or until edges are golden brown.
- Remove and either eat warm for a delicious gooey treat or allow to cool for amazing chewy coconut biscuits!!
